I am Juan Ranas, the creator of the recipe, and I would like to briefly tell you about what motivated me to search for this new flavour, and the steps I took to achieve it.
We all have memories that will forever remain in our minds. I can still feel the atmosphere in my grand-mother’s kitchen when she prepared tomato sauce, I remember the pots on the fire and the glass jars, ready to receive the sauce made with the tomatoes that my grand-father had picked that very morning from his small vegetable garden. Those were times when we still had trust in the food that we ate.
How ironic life can be! We are able to travel anywhere in the world, communicate instantaneously, or send shuttles into space… yet today, many of the ingredients in our food are unknown to us.
I am not a tomato sauce manufacturer
It may sound strange, but it is true. I represent the restaurant “El Huerto de Juan Ranas”, a gastronomic space situated in the Albaicin, face to face with the spectacular Alhambra monument, a restaurant renowned for its views and for having one of the most demanding kitchens of Granada.
Maybe it is now easier to understand. I am not a tomato manufacturer…

Behind the quest for tomato recipe
Many years ago, I noticed that the taste of some dishes started to be quite plane. I discovered the problem wasn’t the preparation, but the raw material, and in that moment I saw it clearly; the basic ingredients were losing their original taste.
The base of our menu in the restaurant is the Mediterranean cuisine, one of the fundamental pillars of which has always been the tomato. Motivated for these reasons, we decided to cultivate our own vegetables, taking care of our tomatoes and creating our own recipe, but there was a long road to travel.
I searched for a particular variety of tomato around the vegetable gardens of small farmers in Granada, I needed the ideal fruit for conserves, that hadn’t been treated, and that was the heritage of previous generations; juicy, with extremely thin skin and of course the real taste of the original tomato, not transgenic or greenhouse tastes.
It wasn’t easy, but we succeeded in the end.
The Recipe revealed
Now we cultivate our own tomatoes, faithful to the open air, under the sun philosophy, raised with the water from Sierra Nevada and with no kind of chemical treatment that could affect its natural balance, letting it ripen in summer, the only time of year that the Juan Ranas tomato sauce recipe is produced.
A combination of humble ingredients: tomatoes, onions, oil, garlic, and a pinch of salt and sugar. Apparently simple, but with a complex balance and truly sublime result. The new taste of the artisan tomato sauce.
Home-made recipe, where the word home-made is applied with full consequences, without underestimating what is implicit within it.
Prepared by hand, with no rush, where each cook is responsible for the elaboration of the sauce from beginning to end.
It is inevitably a limited edition, because it needs time and we only use the ingredients from our garden, but to be honest, I like the fact that it is this way, and it’s not going to change because I think the result is so good that it is worth trying it at least once in a life time.
